Focusing on getting back to my healthier phase
Sunday cooking for the week’s lunches- Chicken Meatball Salad
Ground Chicken, grated ginger, salt, pepper, olive oil, and parsley, bake at 350 until done
Spring mix lettuce, spinach, and romaine with shredded carrots, shredded red cabbage, and jalapeno
Dressing is avocado oil, rice wine vinegar, lime juice, lime zest, and honey
Other food items: Cottage cheese mousse (Blueberry lemon)
Exercise - 45 minute upper body weight lifting and 45 minute treadmill
30 minute meditation
Prepping Book 5 to bring to friends interested in the journey!
Brinner - Finnish Pancakes & Grain free pancakes (breakfast for dinner!)
Preparing to get back to work on Monday!
